Healthy Bruschetta Chicken Recipe
They say the way to a man’s heart is through his stomach…well this recipe is the one that makes my husbands heart grow three sizes haha! It is very fitting that I share this recipe as my first blogged recipe on my healthy meals page because it is my husbands absolute favorite and a staple in our household. The best part is it is one of the easiest dinner recipes I have ever made.
I got the idea to make this recipe because I was trying to spice up our chicken breast meals. We were getting bored of the same old same old grilled and spiced chicken. So I thought to myself, “what could bring a little life to grilled chicken night, but still be a very healthy recipe for us?” Because you know if you look up chicken recipes most are covered in ranch dressing or some other unhealthy crap. I started thinking about what we like to order on the rare occasion that we do go to a fancy restaurant. And then it hit me, bruschetta!!! We love getting a good bruschetta for an appetizer and how easy would that be to make?! All you have to do is sub out the crostini with a chicken breast. And there you have it, our favorite family meal was born just like that!
My healthy bruschetta chicken recipe only contains 6 simple ingredients and only takes 10 minutes to prep so it is perfect for a busy mama or anyone that works long days. Best part of this meal is that it is not only delicious but very healthy!!
What You Need To Make Bruschetta Chicken:
At least 2in deep baking pan
4-6 chicken breasts
Olive oil
Balsamic vinegar
Basil leaves (or you can use basil seasoning)
Tomatoes
Mozzarella cheese
Step By Step Guide To Making Bruschetta Chicken
Preheat oven to 400 degrees
***Optional*** Place foil on the bottom of a at least 2in deep baking pan
Place 4-6 chicken breasts on baking pan
Lightly pour extra virgin olive oil on top of chicken breasts
***Optional add minced garlic to olive oil***
Sprinkle salt on top of chicken breasts
Slice tomatoes into thin circular pieces and place on top of chicken breasts (I normally place 2-3 slices)
Slice your mozzarella cheese into 1/2 inch strips and place on top of tomatoes covering chicken breasts
Top mozzarella with 1-2 basil leaves depending on size of leaves. Or sprinkle basil seasoning all over mozzarella
Now cover chicken breasts with balsamic vinegar. I like to cover enough for them to be laying in a thin layer of vinegar as well but you can put as much vinegar as you would like for taste.
Bake chicken breasts at 400 degrees for 45min or until chicken breasts reach internal temperature of 165 degrees
Remove from oven, let rest for 5min and enjoy!
***Tip*** This recipe pairs nicely with garlic mashed potatoes and/or asparagus!
